veto's birthday cake

If Saucy told you she could hardly believe that an entire week has passed since she posted last, you know it was true because she hardly has anything to show you at all. Because really, it feels like she just made that cupcake martini yesterday. Oh wait, she did. And also on the weekend. Well, that would explain the lack of blogging.

Veto's birthday was celebrated yesterday with a cake that looked like a giant sandwich cookie. It started with this pan and Saucy took it from there.

Hands down, the best part of this dessert was the filling. Saucy added crushed Oreo cookies to vanilla buttercream and then folded in whipped cream to make it light and fluffy. Piping a heavy band of buttercream around the perimeter of the bottom cake, the filling was piled inside before the two halves of the sandwich were stacked together and chilled.

Saucy doesn't have to tell you she's a little displeased with how the cake came out of the pan, she usually has a knack for these things but she can cite high humidity and generally being in a rush with the imperfect nature of the finished product. The cupcake martinis didn't especially help, either.
