sunflower cupcakes


For Mustang Sally's bridal shower last weekend, Saucy made red velvet cupcakes with a cream cheese filling and decorated them like sunflowers... sunflowers will be used in the bouquets at the wedding. Saucy thinks. Well at any rate, they were used on the cupcakes and Saucy is taking the wedding pictures in a couple of weeks so you might see what the flowers look like then.


Sunflower cupcakes are easy... pipe chocolate buttercream in a large circle using a small star tip in the centre of the cake. You can build it up a little... the more frosting the better. Then, using a leaf tip, add the yellow petals around the perimeter of the flower. You can sprinkle chocolate jimmies or shot on the brown part to make it look more like sunflower seeds.

The Emmy Awards are Sunday night. Saucy will be blogging the dresses furiously. She's no Joan Rivers, but she likes the gig. Here's hoping for some fashion hits and misses, just for giggles.

Just wondering if you can freeze iced cupcakes. My mom and daughter are having a bake sale to raise money for a mission trip to Bangladesh and I wanted to do some cupcakes ahead of time. Will they turn out ok if I ice them and then freeze them?

I don't see any reason why not. Avoid putting too much cream or milk in your buttercream, might just be best to use a little less icing sugar so it isn't as stiff and doesn't need the cream at all. I think the cream or milk might make it thaw funny.

You should be able to frost them and put them in an airtight container for about a week.

If it were me, I'd bake the cupcakes and freeze them undecorated and make the frosting (as usual, with the cream) and store it in the fridge (it keeps for a really long time... a couple of weeks).

It doesn't take long to frost the cupcakes. The morning of the sale or the night before, thaw out the cupcakes on the counter. Take them out of the airtight container so they don't get soggy when they thaw. I'd put them on a baking rack and lay a clean tea towel over them. Take your frosting out of the fridge a few hours before you plan to decorate (I store mine pre-made in giant ziploc bags).

Then, just before the bake sale you can frost those bad boys quickly and they'll be fresh as a daisy! Good luck!
