
Homemade Strawberry Ice Cream to Flip For
2 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 teaspoon vanilla
pinch of salt
2 cups fresh strawberries, cleaned and finely chopped - plus more for garnish
This is so very easy... mix the cream, milk, sugar, vanilla and salt into a bowl. Let stand for about fifteen minutes for the sugar to soften. Wisk lightly to mix the sugar, then cover with plastic wrap and place in the fridge. It should stay there at least three hours or overnight.
Crush enough of the chopped berries so that about half the amount stays finely chopped but about a cup of them are crushed. You can place all of the berries in the same bowl in the fridge covered with plastic wrap.
When you are ready to make your ice cream remove the cream mixture from the fridge and give it a good stir. Some of the sugar will have dissolved into a smooth, thick syrup at the bottom of the bowl. Lick the spoon at this point... your mixture will taste like melted ice cream. Resist the urge to pour it into a cup and drink it.
If you have an ice cream maker, fire it up. Pour the cream mixture into the machine and let it curn until it is as thick as whipping cream. Then, slowly add the strawberries and continue churning until just mixed.
If you don't have an ice cream maker, you just need a little more time. Pour the cream mixture into a 9 x 12 baking pan and place it on the shelf of your freezer. Every twenty minutes, give it a good stir. In about two hours it will be thick enough to add the berries. Then you can continue to check on it and stir every twenty minutes or so until it is almost completely frozen. Transfer mixture to a freezer-proof container (with a lid) and proceed...
Pour mixture into the freezer proof container and place in the freezer immediately. It will be important to stir this mixture a few times in the next two hours.
Homemade ice cream can be kept in the freezer for up to three days, if it lasts that long. Remove from the freezer for about ten minutes before scooping and serving:

Making ice cream isn't lots of work... it just requires a little advance planning. Having the right ingredients on hand, having them prepared and chilled and ready when you need them, and having the space in your freezer to keep the body of your ice cream maker ready at all times - Saucy has the kind that she just keeps in the deep freeze and whips out when she needs to use it. After the ice cream is made, it gets returned to the freezer right away for the next time. Frozen hull machines need about 24 hours in at freezing temperature to be effective and Saucy never knows when the mood for ice cream will strike - or when she will have the right fruit on hand to use up. She finds that making ice cream is less time consuming than making a pie with it, believe it or not.

Number 68. Just wondering if you pre-freeze the ice cream a bit before you use the ice cream maker? I got one for Christmas and unless my milk/sugar concoction is about 50% frozen already and the bucket from the machine is completely frozen, I can't get it to turn into anything more than ice milk. And I followed the instructions to a t.

Every year I attended camp as a child, we used to make ice cream in an old fashioned hand cranked ice cream maker! So much fun!
