cornflower blue birthday cupcakes


I was up and at it in the kitchen this morning to ensure the freshest delivery of birthday cupcakes for Ms. E, Assistant Cheerios Coach. She is a very capable and enthusiastic student teacher at Loopy's school until Christmas and today was her birthday. It doesn't seem like that long ago I was an intern in the very same building. It was exciting, stressful, fun and exhausting. That was ten years ago this fall. Ten years ago, I thought Britney had more staying power than Christina. Who knew I could be so naive?

Double fudge cupcakes with fluffy vanilla buttercream tinted cornflower blue and dotted with Williams-Sonoma Sugar Pearls via Sassy and pink royal icing flowers. Extra butter in that buttercream today. So cute.

Oh, that is my not-so-secret buttercream but today I improvised a bit.

1 cup real butter
almost 1 cup Crisco vegetable shortening but I was short so I made up the cup with more butter
dash of salt
tsp of white vanilla (baker's quality)
tsp of butter flavour (baker's quality)
4 cups (approx 1 lb) confectioners sugar
2 tbsp heavy whipping cream

Everything should be at room temperature!

Blend butter and vegetable shortening on high speed in stand mixer with salt, vanilla and butter flavour. Add sugar, one cup at a time beating well after each addition. Beat this on high speed for about two minutes, scraping the bowl a couple of times.

Then, on highest speed, add the whipping cream and beat it into a frothy submission for about two more minutes. The smell is like Heaven but maybe nicer.

You can add food colouring at this point but use it sparingly - you want a nice delicate shade! xoxo

Question: What tip # do you use for your icing and do you have a special technique, a tutorial would be great!

I generally use a Wilton 1A tip with a large coupler and bag. Start in the middle, work in a circle and swirl up. I can show you again on the weekend. I'm making 160 cupcakes for an event ;)

Thanks so much! I just got a new KitchenAid mixer for my birthday, makes things so much easier for multi-tasking! Hoping to try the Strawberry Marscepone cupcakes this weekend. Here in Regina, we have a store called The Bulk Barn, hopefully Saskatoon will get one soon as my mom is sending me weekly shopping lists! They carry all the cake decorating, cupcake liners, every color of chocolate wafer, icing tints, choc making supplies, tinted sugars which are so cool.
Anyways thanks for replying, will check out your tutorial!

The Bulk Barn? It is officially on my list of places to visit the next time I am in Regina. I really, really hope we get one soon. We have a Nutters - it's okay but they've cut their baking supply selection in half, maybe more. It used to be my go-to for every kind of sprinkle and flavouring imaginable. Gah.

I always try to use the 1A tip by Wilton. It is readily available online and at Michaels stores. I use it when I teach so I like to use it at home! It's very forgiving.
